• 1/2 small bunch of coriander
  • 1 fresh red chilli
  • 1/2 clove of garlic
  • 3 heaped tbs crunchy peanut butter
  • soy sauce
  • 2cm ginger stem
  • Zest & juice of  limes
  • Chicken breast

Pre-soak wooden skewers in water.

Peel & roughly chop the ginger.

Add all ingredients to a blender and whiz – add some water to get the right consistency; a gloopy paste. Season if needed.

Put half to one side in a bowl with a drizzle of olive oil, for dipping.

Chunk up the chicken for skewers or skewer the breasts directly and cut between them to make kebabs. Score the larger pieces to help cook and crisp them.

Mix, stir and rub with the satay sauce making sure they are well coated. Drizzle with olive oil and a little salt.

Cook under a hot grill for 8 – 10 minutes until golden brown.

Garnishes – toasted & chopped nuts, fancy noodles.
