• 250g noodles
  • 100g nuts
  • 1 fresh red chilli
  • small bunch of fresh coriander
  • 1-2 tbs soy sauce
  • 1 lime
  • 1 tsp sesame oil
  • 1 tsp fish oil
  • 1 tsp honey

Put nests of noodles in a large bowl and cover with boiling oil and leave to soak for 6 minutes.

Frying pan on medium heat. Smash and crack cashew (or any other) nuts then add them to the pan to toast.

Peel a red onion and whiz smooth with 1 fresh red chilli and coriander stalks. Place the mix in a bowl with 1 -2 tbs soy sauce and olive oil. Squeeze in the lime juice and a tsp of sesame oil and fish oil. Mix well and taste for seasoning.

Drain the noodles, refresh under cold water and drain again. Add them to the bowl.

Turn cashews up to high heat, adding 1 tsp honey. Once dark golden, stir them into the mix and add the coriander leaves. Toss it all together and serve (with chicken satay sauce)
